Slow Cooker Sausage, Spinach and White Bean Soup

So hearty, so comforting, and so easy to make right in the crockpot with just 10 min prep!
Crockpot soups are simply the best, 365 days out of the year. You can set it and forget it, letting the slow cooker do all the work for you so you can go on about your busy day without worrying about a thing. Or at least not about dinner.
And this recipe here is no exception. All you have to do is simply cook up your sausage (if you have one of those fancy crockpots with a saute setting, this can literally be a one pot meal) and throw everything else right into the slow cooker.
When ready to serve, go ahead and stir in your spinach until wilted and top with freshly shaved Parmesan and some crusty bread for the coziest (easiest) meal ever.
Slow Cooker Sausage, Spinach and White Bean Soup
Ingredients
- 1 tablespoon olive oil
- 1 (12.8-ounce) package smoked andouille sausage, thinly sliced
- 3 cloves garlic, minced
- 1 onion, diced
- 3 carrots, peeled and diced
- 2 celery ribs, diced
- 2 (15-ounce) cans Great Northern beans, drained and rinsed
- ½ teaspoon dried oregano
- 2 bay leaves
- 4 cups chicken broth
- Kosher salt and freshly ground black pepper, to taste
- 3 cups baby spinach
- ½ cup shaved Parmesan

- Heat olive oil in a large cast iron skillet over medium high heat. Add sausage, and cook, stirring frequently, until lightly browned, about 3-4 minutes.
- Place sausage, garlic, onion, carrots, celery, beans, oregano and bay leaves into a 6-qt slow cooker; season with salt and pepper, to taste.
- Stir in chicken broth and 2 cups water. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
- Stir in spinach until wilted.
- Serve immediately, topped with Parmesan.

Sautéed in the cooker, switched to slow cooker to complete. I’m not a proficient cook, just the opposite- but this was great! Added the spinach to the bowl. Put leftovers in air tight containers. Thank you for this recipe
Can you use dry beans instead of canned?
I made this for the first time tonight. However, I made it in the instant pot, only used one can of beans, used 8 cups of chicken broth and no additional water and added a package of frozen tortellini and cooked it on high for 5 minutes after sauteeing the onions/carrots/celery in the olive oil until the onions started to become translucent. The tortellini fell apart a little while stirring in the spinach after performing a quick release on the pressure cooker (I probably should have just added the tortellini in after the 5 minute cook time) but it turned into a nice thick tasty soup so I can’t complain. I’d make it again as it came together quickly and was good.
Can I use frozen spinach?
Made it! Husband version (1 can beans, no extra water)and vegan version (added red pepper flakes because no vegan andouille sausage so used an alternative that I like and then used red pepper flakes, no idea if it was similar but it was super good). On the official Sunday slow cooker rotation. Thank you!
I have made this recipe four times now and I find it to be a wonderful tasting soup but I have learned to tweak it a bit. I use only half the beans asked for in the recipe as the beans soak up all the broth and the soup looks like sludge. I also use 8 cups of chicken broth instead of 4 plus two cups of water and it really comes out nice. I personally don’t see the point in adding water as I want a strong flavour. I also use polish kelbosa instead of the andouille as I can’t get it where I live. Hope you don’t mind my changes, it really is wonderful soup.
Absolutely fantastic soup. Even my bean-hating husband went back for seconds and raced about how delicious it was. In most recipes, I modify to taste but this was perfect as is.
Could I use grated Parmesan rather than shaved Parmesan?

Could I substitute Polish Kelbasa for sausage?
Excellent soup! I made it for a potluck and it was a hit! I’ve also added rice a different time (cooked separately and then put in the bowl before the soup) and it was delicious that way too. All around, a great reliable recipe!

Great soup! So easy and warming on cold days or nights! Leftovers are few because of second helpings, but the soup is better the next day!
If you do not care for the andouille sausage, use a smoked Sausage like Ekridge Farms.
Delicious! I made this soup for my husband and me. He had 3 helpings and asked when I was going to make it again. He even ate the spinach which he never does. Easy, fast & yummy.
